White Chocolate Mousse de Raspberry

He he, another recipe taken from my mom's Pillsbury Recipe Book For Chocolate Lovers which my dad bought as a present for my mom when he went to Australia years ago.

I'd like to dedicate this recipe to Natrah and Daniel Potter, semoga your plan to sell cakes and cookies for Raya berjalan lancar ok...(betul kan korang nak jual kuih?. Nah amik resipi ni, saya bagi free...)




WHITE CHOCOLATE MOUSSE DE RASPBERRY

Sauce
10-oz pkg. frozen raspberries with syrup, thawed
2 tablespoons sugar
1 tablespoon frozen orange juice concentrate                                                  

Mousse
2 cups whipping cream
6-oz pkg. white baking bar, cut into pieces
1 teaspoon vanilla

Glaze
1/4 cup milk chocolate chips
1 teaspoon oil

In blender container or food processor bowl with metal blade, combine all sauce ingredients. process until smooth; strain to remove seeds. Refrigerate.

In medium saucepan, melt whipping cream and white baking bar over low heat, strring constantly untul smooth. Stir in vanilla. Pour into large bowl; cover with plastic wrap. Refrigerate 6 hours or overnight until mixture is very cold and thickened, strring occasionally. Using  mixer, beat cream mixture at high speed until light and fluffy. DO NOT OVERBEAT.

Melt glaze ingredients in small saucepan over very low heat until smooth, stirring constantly.

To serve, pour scant 1/4 cup raspberry sauce onto each dessert plate. Spoon 1/2 cup mousse in center of plate. Drizzle glaze over mousse and sauce. Garnish as desired. 6 servings.

Bila dah habis tulis ni, saya rasa resipi ni untuk dessert kot, so maybe tak sesuai untuk projek korang la pulak, sori ye, tapi kalau korang buat, jangan lupa saya ye. Nanti la kalau saya rajin saya cari resipi kuih dan kek lak hokey :)
